4 Quick and Easy Veggie Recipes

Vegetables are easier to cook than chicken, burgers, or pork chops. Here are four creative mini-recipes to try.

  • Add grated carrots, chopped squash, and steamed spinach to a pound of ground beef or turkey, then shape into patties and grill for your own version of a veggie burger.


  • Toss the strands from a cooked spaghetti squash with olive oil, fresh parsley, and Parmesan cheese. This makes a wonderful replacement for mashed potatoes or white rice as a side dish, suggests Jorj Morgan, author of At Home in the Kitchen: The Art of Preparing the Foods You Love to Eat.


  • Substitute sweet potatoes topped with a splash of maple syrup and a sprinkle of low-fat granola for mashed potatoes. This way, you'll get extra helpings of beta-carotene and vitamins B and C, plus six grams of fiber.


  • Stuff eggplant with tomatoes, lay slices of Parmesan cheese over them, drizzle with olive oil, wrap in aluminum foil, then bake or grill until softened. Voilà! A wonderful grilled "sandwich."
