Apple Raspberry Brown Betty

This healthy and delicious dessert is simple to make and a guaranteed crowd-pleaser.

The type of fruit used for the filling can be adjusted depending on what's in season. Top with low-fat vanilla frozen yogurt to finish off this treat.

Preparation time: 20 minutes
Cooking time: 25-30 minutes

You Will Need
1/4 cup unsweetened apple juice
1/4 cup apple or currant jelly
1 tablespoon cornstarch
5 apples (1 1/4 pounds), unpeeled, cored, and thinly
     sliced
1/3 cup currants or raisins
1 cup frozen raspberries (no sugar added),thawed

For the topping:
1/4 cup rolled oats
3 tablespoons fresh bread crumbs
2 tablespoons brown sugar
1 tablespoon butter or margarine, melted
1/2 teaspoon ground cinnamon

What to Do
1. Lightly grease an 8-inch-square baking dish. In a large saucepan combine apple juice, apple jelly, and cornstarch. Stir until blended.

2. Stir in apples and cook over medium-high heat until mixture comes to a boil. Cook for 1 minute, stirring constantly. Remove from heat and allow to cool. Gently fold currants or raisins into mixture and then spoon into the baking dish. Layer the raspberries on top.

3. Preheat oven to 400°F. In a small bowl combine the topping ingredients and mix well. Sprinkle over the fruit and bake until topping is nicely browned, about 25-30 minutes.

Serves 6

Each serving provides: Calories 193, fat 3 g, saturated fat 1 g, cholesterol 5 mg, sodium 37 mg, carbohydrates 43 g, fiber 4 g, protein 1 g.
