Chicken and Cheese Subs

Kids will love these chicken and cheese rolls for lunch or as an after-school snack.

With this easy recipe, youngsters can have subs just like from a sandwich shop.

You Will Need
2 tablespoons reduced-fat mayonnaise
1 teaspoon prepared mustard
4 white French rolls, each 6 inches long
4 lettuce leaves
6 ounces thinly sliced cooked chicken
4 slices (3/4 ounce each) reduced-fat American cheese
4 slices (3/4 ounce each) reduced-fat process Swiss cheese
12 slices sweet or dill pickle

What to Do
1. In a small bowl, combine the mayonnaise and mustard. Split French rolls and spread with mustard mixture.

2. Top each roll bottom with a lettuce leaf, some of the chicken, a slice of American cheese, and a slice of Swiss cheese. Arrange 3 pickle slices on each sandwich. Top with roll top.

Serves: 4
