Confetti Turkey Salad Sandwich

Sweet red bell peppers, corn, and green onions add crunchiness, color, and vitamins to this spicy turkey salad.

You Will Need
2 cups diced cooked turkey or chicken (8 ounces)
1 small red bell pepper, cored, seeded, and finely chopped (1/2 cup)
1/2 cup frozen corn kernels, thawed and drained
2 scallions, including tops, sliced (1/4 cup)
1/2 cup plain low-fat yogurt
3/4 teaspoon ground cumin
1/8 teaspoon salt
8 slices whole-grain bread

What to Do
1. Combine turkey, bell pepper, corn, scallions, yogurt, cumin, and salt in a large bowl.

2. Spread about 3/4 cup turkey salad on each of 4 bread slices. Top with remaining bread slices and cut each sandwich in half.

This is a good meal that is about 20 oz. without all the bread, just right for a one person lunch. I have heard that bread should be limited to 1-2 slices per day from several sources. So I would do this as a salad without the bread.
