You Will Need
1 cup packed brown sugar
1 cup water
1 cup raisins
1/3 cup shortening
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1 teaspoon baking soda
2 tablespoons hot water
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
What to Do
1. In a heavy saucepan, combine first seven ingredients. Bring to a boil and boil for 5 minutes. Cool. Place in a mixing bowl.
2. Dissolve baking soda in hot water; add to mixing bowl. Combine flour, baking powder and salt; add to batter.
3. Pour into a greased 9 x 5 x 3-inch loaf pan. Bake at 350°F for about 45 minutes or until cake tests done. Serve with Hard Sauce if desired.
