This is a very special and savory way to prepare a boneless beef rib roast

Seasoned Rib Roast

"This is a very special and savory way to prepare a boneless beef rib roast," remarks Taste of Home reader Evelyn G. of Kasilof, Alaska. "Gravy made from the drippings is exceptional." You can also use a rib eye roast with excellent results.

You Will Need
1 1/2 teaspoons lemon-pepper seasoning
1 1/2 teaspoons paprika
3/4 teaspoon garlic salt
1/2 teaspoon dried rosemary, crushed
1/4 teaspoon cayenne pepper
1 boneless beef rib roast (3 to 4 pounds)

What to Do
1. In a small bowl, combine the seasonings; rub over roast.

2. Place roast, fat side up, on a rack in a shallow roasting pan. Bake, uncovered, at 350°F for 1 3/4 to 2 1/2 hours or until meat reaches desired doneness (for rare, a meat thermometer should read 140°; medium, 160°F; well-done, 170°F).

3. Remove to a warm serving platter. Let stand for 10-15 minutes before carving.

Serves: 6-8
