You Will Need
Half of a 1/2-pound loaf whole-wheat French or Italian bread
1 garlic clove, cut in half
2 large ripe tomatoes, cored and chopped
1/2 cup shredded mozzarella cheese (about 2 ounces)
1/2 tablespoon olive oil
1/2 teaspoon dried oregano, crumbled
1/8 teaspoon freshly ground pepper
1/4 cup freshly grated Parmesan cheese
What to Do
1. Heat broiler. Cut bread in half lengthwise. Scoop out and discard the soft center. Place bread cut side up on an ungreased baking sheet and toast in the broiler, 5 to 6 inches from heat, until lightly browned, 3 to 4 minutes. Remove bread and rub with garlic.
2. Meanwhile, in a small bowl, combine tomatoes, mozzarella, olive oil, oregano, and pepper. Spoon the mixture into each piece of bread and sprinkle with Parmesan. Broil 3 minutes.
