Here's a new twist on an old favorite. It's a perfect brown-bagger for those who are always on the run.

Preparation Time: 5 minutes

You Will Need
1 tablespoon peanut butter
1 tablespoon part skim ricotta cheese
3 or 4 apple slices
1 whole-wheat English muffin

What to Do
Combine peanut butter and ricotta cheese with a fork until well blended and creamy. Spread on English muffin. Top with apple slices.

Tips:
Peanuts provide more protein than any other nut. They also supply good amounts of fiber, vitamin E, and B vitamins, notably folate.
