Peanut Butter Dinosaurs

Treat your kids with these dinosaur-shaped peanut butter cookies.

You Will Need
3/4 cup butter or margarine, softened
3/4 cup creamy peanut butter
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 egg
1 teaspoon vanilla
2 1/2 cups all-purpose flour
1/2 teaspoon salt

What to Do
1. In a large mixing bowl, combine butter, peanut butter, sugars, egg, and vanilla. Beat at medium speed with electric mixer until light and fluffy.

2. Add flour and salt. Beat at low speed until soft dough forms. Divide dough in half. Cover with plastic wrap.

3. Chill 2 to 3 hours, or until firm. Heat oven to 350°F. On well-floured surface, roll half of dough to 1/4-inch thickness (dough will be fragile). Using 4- to 5-inch dinosaur cookie cutters, cut shapes into dough. Place shapes 2 inches apart on ungreased cookie sheets. Repeat with remaining dough.

4. Bake for 10 to 13 minutes, or until set. Cool completely. Decorate cookies with frosting, if desired. Let dry completely before storing.

Makes: about 3 dozen cookies
