Lemon Drop Cookies

No one will guess that these are low-fat cookies.

Jalayne L. bakes these cute citrus bites in her Marion, Illinois, kitchen.

Preparation time: 20 minutes
Cooking time: 10 minutes per batch plus cooling

You Will Need
2 eggs
1 cup sugar
2 teaspoons grated lemon peel
2 teaspoons lemon extract
1 1/3 cups all-purpose flour
1 teaspoon baking powder

Glaze
1 1/2 cups confectioners' sugar
1 to 2 tablespoons lemon juice


What to Do
1. In a small mixing bowl, beat eggs until frothy. Beat in the sugar, lemon peel and extract. Combine flour and baking powder; gradually add to sugar mixture.

2. Drop by teaspoonfuls 2 inches apart onto baking sheets coated with nonstick cooking spray. Bake at 325°F for 10-12 minutes or until lightly browned. Cool completely on baking sheets before removing.

3. For glaze, in a small bowl, combine confectioners' sugar and enough of the lemon juice to achieve desired consistency; drizzle over the cookies.

Yield: 3 1/2 dozen


Nutrition facts: 2 cookies equals 107 calories, 1 g fat (trace saturated fat), 20 mg cholesterol, 17 mg sodium, 24 g carbohydrate, trace fiber, 1 g protein. Diabetic exchange: 11/2 starch.
