Apple-Pumpkin Frozen Yogurt

The clean, fresh taste of apple-pumpkin frozen yogurt is perfect after a hearty meal. Serve this for a tasty twist on pumpkin pie.


Prep time: 20 minutes, plus freezing time
Cooking time: 2 minutes


You Will Need
1 envelope unflavored gelatin
1/2 cup frozen apple juice concentrate, thawed
1/3 cup light brown sugar
1/2 cup evaporated skim milk, chilled
1 1/4 cups nonfat plain yogurt
1 1/4 cups canned pumpkin
1/2 teaspoon apple-pie spice

What to Do
1. Dissolve gelatin, substituting apple juice concentrate for the low-fat milk.

2. While the gelatin mixture is cooling, whip the evaporated skim milk until soft peaks form.

3. Stir yogurt, pumpkin and apple-pie spice into cooled gelatin mixture. Add yogurt mixture to whipped evaporated skim milk and beat for 1 minute.

4. Freeze in an ice-cream maker.
