Turkey and Cuke Sanwich Recipe

Cranberry sauce adds sweetness and cucumbers add crunch to this hearty sandwich. To take to school, pack cucumber separately and add just before eating.

Yield: 1 serving

What You Need

1 tbsp. process cheese spread
2 whole grain (or your favorite) bread slices
1 tbsp. cranberry sauce
6 thin English cucumber slices (with peel)
2 oz. deli turkey breast (about 2 slices)



What to Do

Spread cheese spread evenly on 1 side of 1 bread slice. Spread cranberry sauce evenly on 1 side of second bread slice.

Layer cucumber and turkey slices on top of cheese spread. Cover with second bread slice, cranberry-side down. To serve, cut in half or into quarters.

1 sandwich: 296 Calories; 9.1 g Total Fat (2.6 g Mono, 1.6 g Poly, 3.7 g Sat); 39 mg Cholesterol; 36 g Carbohydrate; 4 g Fiber; 21 g Protein; 953 mg Sodium

Variation: Omit deli turkey breast slices. Use same amount of leftover roast turkey.
