Vermont cheese maker Cabot makes wonderful Cheddars; the Clothbound Cheddar is a personal favorite. In fact, this cheese, a joint effort between Cabot Creamery and Jasper Hill Farms, won the Best of Show award from the American Cheese Society in 2006.
