Classic Burger

Create the perfect burger with these delicious recipes.

Create better burgers the next time you grill with any of these tasty recipes. Below you'll find these variations to the classic burger: Roquefort or blue cheese burgers, Brie burgers, surprise burgers, and turkey burgers.

Prep time: 10 minutes
Cooking time: About 15 minutes

You Will Need
1 pound ground beef chuck
2 tablespoons ketchup
2 teaspoons Dijon mustard
1 teaspoon salt
1/4 teaspoon black pepper

What to Do
1. Preheat the grill or broiler. In a large bowl, mix all ingredients until well blended. Form into four 6-inch patties, about 1-inch thick.

2. Grill patties over moderately hot coals or broil 4 inches from the heat until well done -- 6 to 7 minutes on each side.

Variations:

Roquefort or Blue Cheese Burgers
Prepare as directed above, using 1 1/2 pounds ground beef. Divide into eighths and shape into thin patties. In the center of each of 4 patties, place 1 tablespoon crumbled Roquefort or blue cheese. Top with remaining patties, pinch edges to seal completely, and grill as directed. Makes 4 servings.

Brie Burgers
Prepare Roquefort or Blue Cheese Burgers as directed above, but sandwich each pair of thin patties together with 1 (1" x 1" x 1/4"-thick) slice chilled ripe Brie instead of crumbled Roquefort. Makes 4 servings.

Surprise Burgers
Prepare Roquefort or Blue Cheese Burgers as directed above, but sandwich each pair of thin patties together with 1 tablespoon sauteed diced onion and 1 scant teaspoon each sweet pickle relish and Dijon mustard instead of crumbled Roquefort. Makes 4 servings.

Turkey Burger
Prepare Classic Burger, substituting 1 pound ground turkey for ground beef. Omit ketchup and mustard and add 1/4 cup each finely chopped yellow onion and parsley and 1 minced clove garlic along with salt and pepper. Grill 6 to 7 minutes on each side or until well done. Makes 4 servings.

Turkey Burger Variations
To the turkey mix, add one of the following: 2 tablespoons chili sauce or barbecue sauce. Or 1 teaspoon Dijon mustard and 1/2 teaspoon each dried thyme and grated lemon zest. Or 2 tablespoons Chinese plum sauce and 1 teaspoon minced fresh ginger. Also substitute 1/2 cup finely chopped scallions for yellow onion.
