Tangy Ham Steak

This lip-smacking steak is made from a minimum of ingredients. And, best of all, this simple recipe provides the main meal in under 10 minutes!

Total Prep Time: 10 minutes

You Will Need
1/2 cup ketchup
1/3 cup sweet pickle relish
1 tablespoon cider vinegar
1 teaspoon brown sugar
1/8 teaspoon cayenne pepper
1 fully cooked ham steak (about 1 pound)

What to Do
In a bowl, combine the ketchup, relish, vinegar, brown sugar, and cayenne; set aside 1/2 cup for serving. Grill the ham steak, uncovered, over medium heat for 3 minutes on each side, basting occasionally with remaining sauce. Serve with reserved sauce.

Serves: 3-4


Dilly Pork Chops

These pork chops are so delicious you'll want to cook extra to freeze for another busy night. If you love the mixture of butter, mustard, and dill, try adding it to chicken or fish.

Total Prep Time: 10 minutes

You Will Need
6 boneless pork loin chops (1/2 inch thick)
1/4 cup butter or margarine, melted
1 tablespoon Dijon mustard
1 to 1 1/2 teaspoons dill weed
1 teaspoon Worcestershire sauce
1/8 teaspoon garlic powder

What to Do
Prick pork chops with a fork. In a small bowl, combine the remaining ingredients; spoon over both sides of chops. Place on a broiler pan; broil 4-6 inches from the heat for 4 minutes on each side or until juices run clear.

Serves: 6


European Tossed Salad

Colorful and quick, this salad is perfect for when time is tight.

Total Prep Time: 10 minutes

You Will Need
1 package (10 ounces) ready-to-serve European      blend salad greens
1/2 cup grape tomatoes
1/2 cup mayonnaise
1 to 2 tablespoons sugar
1 to 2 tablespoons lemon juice

What to Do
In a salad bowl, combine the greens and tomatoes. In a small bowl, whisk the mayonnaise, sugar, and lemon juice. Pour over salad and toss to coat.

Serves: 6-8


Asparagus Ham Roll-Ups

This dressed up ham and cheese sandwich allows you to sneak in a serving of veggies. Experiment using different cheeses, such as Brie or Camembert.

Total Prep Time: 10 minutes

You Will Need
16 fresh asparagus spears, trimmed
1/4 cup mayonnaise
4 flour tortillas (8 inches)
4 thin slices deli ham
8 slices Swiss cheese

What to Do
Place asparagus in a shallow microwave-safe dish; add 1/2 inch of water. Cover and microwave on high for 2 minutes or until crisp-tender. Drain and rinse in cold water. Spread 1 tablespoon of mayonnaise over each tortilla. Top each with one slice of ham, two slices of cheese, and four asparagus spears; roll up.

Serves: 4

Italian Steak Sandwiches

The minced garlic and seasonings add a touch of gourmet to this roast beef sandwich. Add carrot sticks or a tomato salad to complete this easy meal.

Total Prep Time: 10 minutes

You Will Need
2 garlic cloves, minced
1/8 teaspoon crushed red pepper flakes
2 tablespoons olive or vegetable oil
16 slices deli roast beef
1/2 cup beef broth
2 tablespoons red wine or additional beef broth
2 teaspoons dried parsley flakes
2 teaspoons dried basil
1/4 teaspoon salt
1/4 teaspoon dried oregano
1/8 teaspoon pepper
4 sandwich rolls, split
4 slices provolone cheese

What to Do
In a large skillet, sauté garlic and pepper flakes in oil. Add the roast beef, broth, wine or additional broth and seasonings; heat through. Place beef slices on rolls; drizzle with the broth mixture. Top with cheese.

Serves: 4
