Beef 'n' Rice Enchiladas

This colorful Mexican treat tickles the taste buds with only five ingredients.

Total Prep Time: 45 minutes or less

You Will Need
1 package (6.8 ounces) Spanish rice and vermicelli mix
1 pound ground beef
2 cans (10 ounces each) enchilada sauce, divided
10 flour tortillas (8 inches), warmed
4 cups (16 ounces) shredded cheddar cheese, divided

What to Do
1. Prepare rice mix according to package directions. Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. Stir in Spanish rice and 1 1/4 cups enchilada sauce. Spoon about 2/3 cup beef mixture down the center of each tortilla. Top each with 1/3 cup cheese; roll up.

2. Place in an ungreased 13 x 9 x 2-inch baking dish. Top with the remaining enchilada sauce and cheese. Bake, uncovered, at 350° for 8-10 minutes or until the cheese is melted.

Yield: 10 enchiladas


Chicken in Baskets

This irresistibly fun and nutritious meal can be enjoyed by both young and old.

Total Prep Time: 25 minutes

You Will Need
1 package (10 ounces) frozen pastry shells
1 can (10 3/4 ounces) condensed cream of chicken soup, undiluted
1 package (9 ounces) frozen diced cooked chicken, thawed
1 cup frozen mixed vegetables, thawed
3/4 cup milk

What to Do
Bake pastry shells according to package directions. Meanwhile, in a microwave-safe bowl, combine the soup, chicken, vegetables, and milk. Cover and microwave on high for 4-5 minutes or until bubbly. Cut the top off each pastry shell; fill with chicken mixture. Replace tops.

Serves: 3

Flavorful Fish Fillets

An impressive dish that is both delicious and easy to prepare.

Prep/Total Time: 15 minutes


You Will Need
1 package (18.7 ounces) frozen breaded fish fillets
3 tablespoons olive oil
1 jar (26 ounces) spaghetti sauce
3 tablespoons prepared horseradish
1 cup (4 ounces) shredded mozzarella cheese

What to Do
In a large skillet, cook fish in oil for 4 minutes on each side or until crisp and golden brown. Meanwhile, in a large saucepan, combine the spaghetti sauce and horseradish; cook until heated through. Spoon over fish; sprinkle with cheese. Cover and remove from the heat. Let stand for 5 minutes or until cheese is melted.

Serves: 4-5


Grilled Salmon Steaks

These flame-broiled steaks are rich in both nutrients and taste. Sprinkle the grill coals with rosemary for additional flavor.

You Will Need
1 tablespoon rubbed sage
1/4 teaspoon white pepper
1 tablespoon lemon juice
1 tablespoon olive or canola oil
6 salmon steaks (6 ounces each)

What to Do
1. In a bowl, combine sage, pepper, lemon juice, and oil. Brush over both sides of salmon steaks. Coat grill rack with nonstick cooking spray before starting the grill.

2. Place salmon on grill rack. Grill, covered, over medium heat for 5 minutes. Turn; grill 7-9 minutes longer or until fish flakes easily with a fork.

Cheesy Potato Casserole

This ultimate comfort food will quickly become a household favorite.

Prep Time: 30 minutes

You Will Need
6 medium potatoes (about 2 pounds), peeled and cut into chunks
1 carton (8 ounces) French onion dip
1 cup (8 ounces) small-curd cottage cheese
1/2 to 1 cup shredded cheddar cheese
Salt and pepper to taste

What to Do
Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Drain and mash potatoes. Stir in the onion dip, cottage cheese, salt, and pepper.

Transfer to a greased shallow 1 1/2-quart baking dish. Sprinkle with cheddar cheese. Bake, uncovered, at 350° for 30-40 minutes or until heated through and cheese is melted.

Serves: 4-6
