You're never too old for a hot, gooey grilled cheese, and restaurants are embracing the childhood staple. Last year Ryan Afromsky, 26, opened meltDown etc., a Culver City, California, eatery specializing in the cheesy classic. His tips for making a sophisticated sandwich:
Don't Skimp
Fresh sourdough bread and European-style butter make a huge difference.
Melt the Butter
And brush it on the bread (and crust) before grilling, for a uniform texture and rich flavor.
Get Cheesy
Havarti, fontina, jalapeño Jack or goat cheese can add a flavorful spin.
Go Beyond Tomatoes
Add caramelized onions, pesto, Italian salami, figs or apples.
