Banana Monkey Crunch Recipe

Ingredients

  • 14 oz. can of crushed pineapple
  • 3 cups vanilla yogurt
  • 1 box of instant vanilla pudding powder
  • 1 cup granola
  • 2 medium bananas, sliced

    How to make it

    Drain the juice from the pineapple into the large bowl. Set aside the pineapple.

    Add the yogurt and pudding powder to the pineapple juice. Beat with the whisk for about 2 minutes until the mixture is smooth and thick. Add the crushed pineapple. Stir well. Spoon into the dessert bowls.

    Sprinkle with the granola. Top with the banana. Yield: 6 servings.

Healthy Cooking Tip

Plain yogurt instead of vanilla yogurt makes this recipe a little less sugary.
