Ingredients
- 1 can (15 ounces) white beans, rinsed and drained
- 2 1/2 cups chicken broth
- 2 tablespoons tomato paste
- 2 teaspoons red wine vinegar
- 1 red bell pepper, diced
- 1/3 cup minced onion
- 3 cloves garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon red pepper flakes
- 3/4 pound skinless, boneless chicken breasts, cut into 1-inch chunks

Mash white beans and stir into chicken broth. Combine with tomato paste, vinegar, bell pepper, onion, garlic, salt, red pepper flakes, and chicken in a large saucepan. Bring to a boil over medium-high heat. Reduce heat to medium-low and simmer until chicken is cooked through.
