This cloud-light lemon dessert makes a festive finish for a gala meal.
Ingredients
- 1 pint strawberries
- 1 packet unflavored gelatin
- 1/2 cup cold water
- 3/4 cup sugar
- 2 teaspoons grated lemon zest
- 1/2 cup fresh lemon juice
- 1 tablespoon extra-light olive oil
- 1 large egg
- 1 1/3 cups plain fat-free yogurt

Core strawberries and slice thickly.

Sprinkle gelatin over 1/4 cup cold water in small bowl. Let stand 5 minutes to soften.

Whisk together remaining 1/4 cup water, sugar, lemon zest, lemon juice, oil, and egg in medium saucepan until well combined. Cook over low heat, whisking constantly, until mixture is hot, about 5 minutes. Whisk in softened gelatin and cook, whisking constantly, until gelatin has dissolved, about 1 minute.

Remove from heat, transfer to medium bowl, and cool to room temperature, whisking occasionally. Whisk in yogurt. Alternately layer strawberries and lemon mousse in 8 dessert bowls and chill until set, about 3 hours.
