Ingredients

  • 3 pounds plum tomatoes, seeded and chopped
  • 2/3 cup chopped fresh basil
  • 1/4 cup olive oil
  • 1/4 cup chopped fresh flat-leaf parsley
  • 2 tablespoons chopped fresh mint
  • 2 teaspoons grated orange zest
  • 3 garlic cloves, minced
  • 1/2 teaspoon freshly ground black pepper
  • Salt
  • 12 ounces linguine
  • 1/4 cup Parmesan cheese

    How to make it   30 minutes

    Mix the tomatoes, basil, oil, parsley, mint, orange zest, garlic, pepper, and salt, to taste, in a medium bowl. Let stand at least 30 minutes or up to 2 hours at room temperature.

    Bring a large pot of salted water to a boil over high heat. Add the pasta and cook according to the package directions. Drain well and put into a large pasta bowl.

    Top with the sauce and sprinkle with the Parmesan.
