This traditional side dish will be a hit at any outdoor party or picnic.
- 1 1/2 pounds new or small red potatoes, halved or quartered
- 2 eggs
- 2 stalks celery, diced
- 1 small cucumber, peeled, seeded, and diced
- 4 scallions, sliced
- 1/2 cup plain nonfat yogurt
- 1/4 cup low-fat sour cream
- 1/4 cup low-fat mayonnaise
- 2 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 1/8 teaspoon each salt and pepper
- 2 tablespoons chopped parsley
