Asparagus Ham Roll-Ups

This dressed up ham and cheese sandwich allows you to sneak in a serving of veggies. Experiment using different cheeses, such as Brie or Camembert.

Total Prep Time: 10 minutes


  • 16 fresh asparagus spears, trimmed
  • 1/4 cup mayonnaise
  • 4 flour tortillas (8 inches)
  • 4 thin slices deli ham
  • 8 slices Swiss cheese

    How to make it

    Place asparagus in a shallow microwave-safe dish; add 1/2 inch of water. Cover and microwave on high for 2 minutes or until crisp-tender. Drain and rinse in cold water. Spread 1 tablespoon of mayonnaise over each tortilla. Top each with one slice of ham, two slices of cheese, and four asparagus spears; roll up. Serves 4.
