- 2 tbsp. egg white product (or 1 egg white)
- 1/3 cup icing (confectioner’s) sugar
- 1 tsp. cocoa, sifted if lumpy
- ¾ cup medium unsweetened coconut
How to make it
Put egg white into medium bowl. Beat with the whisk until bubbly on top.
Put icing sugar and cocoa into small bowl. Stir. Add to egg white. Mix well.
Add coconut. Stir. Cut two 6 inch pieces of parchment paper. Place a parchment sheet on each plate. Using a rounded tablespoon of coconut mixture for each, spoon 4 mounds onto each sheet. Make sure the mounds are spaced about 1 1/2 inches apart. Place 1 plate in the microwave. Microwave on high (100%) for about 90 seconds until the mixture is firm. Remove the plate from the microwave. Let cool for 5 minutes. Repeat with the second plate. Serves 8.
