Eggless-Milkless-Butterless Cake

Avoid dairy products altogether with this tasty spice cake.

Ingredients

  • 1 cup packed brown sugar
  • 1 cup water
  • 1 cup raisins
  • 1/3 cup shortening
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 2 tablespoons hot water
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

    How to make it  60 minutes

    In a heavy saucepan, combine first seven ingredients. Bring to a boil and boil for 5 minutes. Cool. Place in a mixing bowl.

    Dissolve baking soda in hot water; add to mixing bowl. Combine flour, baking powder and salt; add to batter.

    Pour into a greased 9 x 5 x 3-inch loaf pan. Bake at 350°F for about 45 minutes or until cake tests done. Serve with Hard Sauce if desired.
