Ham and Cheese Breakfast Strata


Stratas are made with layers of egg-soaked bread, cheese, and your favorite high-flavor ingredients like bacon, sausage, sun-dried tomatoes, or other vegetables. Our version includes ham and a surprisingly crisp topping made with cornflakes.


  • 12 slices white bread, crusts removed
  • 1 pound fully cooked ham, diced
  • 2 cups shredded cheddar cheese (about 8 ounces)
  • 6 eggs
  • 3 cups milk
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon ground mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • Dash of cayenne pepper
  • 1/4 cup minced onion
  • 1/4 cup minced seeded green bell pepper
  • 1/4 cup unsalted butter or margarine, melted
  • 1 cup crushed cornflakes

    How to make it

    Grease a 9 x 13-inch baking dish, then arrange 6 bread slices in the bottom. Top with the ham and cheese. Cover with the remaining bread slices.

    In a medium bowl, beat together the eggs, milk, Worcestershire sauce, mustard, salt, black pepper, and cayenne. Stir in the onion and green pepper and pour over all. Cover and refrigerate for several hours or overnight. Remove from the refrigerator 30 minutes before baking.

    Preheat the oven to 350°F.

    Pour the butter over the bread and sprinkle with the cornflakes. Bake, uncovered, until a knife inserted near the center comes out clean, 50 to 60 minutes. Let stand for 10 minutes before serving.
