Make Your Own Cereal Bars

Peanuts are an excellent source of protein, iron, and fiber, while flaxseed has a wide range of health benefits including being rich in alpha-linolenic acid, an essential fatty acid that contributes to heart health. Beyond that, they are a fun and convenient snack on-the-run or anytime.

Cranberry-Peanut Cereal BarsNumber of servings: Per square

  • 3 cups puffed whole-grain cereal, like Kashi
  • 1/2 cup chopped dry-roasted unsalted peanuts
  • 1/4 cup chopped unsweetened dried cranberries
  • 2 tablespoons ground flaxseed
  • 1/3 cup creamy peanut butter
  • 1/2 cup agave syrup

    How to make it  25 minutes

    Preheat the oven to 350°F. Coat an 8-inch square metal baking pan with nonstick cooking spray.

    Stir together the cereal, peanuts, cranberries, and flaxseed in large bowl.

    In a small saucepan over low heat, stir together the peanut butter and syrup until the mixture boils, about 1 minute. Stir into the cereal mixture until well-blended. Scrape into the prepared pan and press down firmly with the back of spatula to compact.

    Bake until the edges are golden, about 15 minutes. Cool thoroughly before cutting into squares.
