- 1 cup ricotta cheese
- 2 tablespoons extra-virgin olive oil
- 2 minced garlic cloves
- 3 red bell peppers, seeded, roasted, and chopped
- 1/3 cup chopped fresh basil
- 7 tablespoons freshly grated Parmesan and /or
- Romano cheese
- 1 /4 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
