You Will Need
2 egg whites
1/2 teaspoon vanilla extract
6 tablespoons sugar
1 cup flaked coconut
What to Do
1. In a small mixing bowl, beat egg whites, vanilla and salt until foamy. Gradually add sugar, beating until stiff peaks form. Fold in the coconut.
2. Drop by tablespoonfuls 2 inches apart onto well-greased baking sheets. Bake at 300°F for 25 minutes or until lightly browned. Immediately remove to wire racks to cool. Store in an airtight container.
