This dish has two tasty variations; it can be prepared with either sautéed shrimp or, for extra flavor, marinated grilled shrimp.
Ingredients
- 2 tablespoons unsalted butter or margarine
- 1 pound jumbo shrimp, peeled and deveined
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1 teaspoon ground white pepper
- 2 tablespoons chopped parsley
- 3 tablespoons lemon juice

Heat a large skillet on a grill rack 4 to 6 inches from the heat or over moderately high heat on the stove. Melt butter in skillet. When foamy, add shrimp and sauté for 2 minutes.

Add garlic, salt, pepper, and parsley and cook 1 minute more. Stir in lemon juice.

Serve over cooked white rice.

Variations
Grilled Pepper Shrimp
Marinate 1 pound peeled or unpeeled jumbo shrimp in 1/4 cup lemon juice, 1/2 teaspoon salt, and 1 tablespoon cracked black pepper in the refrigerator for 1 hour. Grill over moderately hot coals 3 1/2 minutes on each side. Or broil 4 inches from the heat of a preheated broiler for 4 to 5 minutes on each side. Makes 4 servings.
Grilled Asian-Style Shrimp
Prepare Grilled Pepper Shrimp as directed above, omitting black pepper and adding 2 tablespoons dark sesame oil, 1 large minced clove garlic, and 1 tablespoon soy sauce to the marinade. Grill or broil as directed. Makes 4 servings.
