Sweet Potato Fries with Paprika and Oregano

  • 2 sweet potatoes (1 pound)
  • 2 tablespoons olive oil
  • 1 teaspoon coarse salt
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground black pepper

    Preheat the oven to 425°F, and place a nonstick baking sheet in the oven.

    Peel the sweet potatoes and cut into 3-inch-long x 1/4-inch-wide sticks. Toss with the oil, salt, oregano, paprika, and pepper. Spread evenly on the hot baking sheet and bake for 15 minutes.

    Turn carefully (they will be soft), and bake until lightly browned, about 15 minutes more.
