Ingredients
- 1 pound sweet potatoes, peeled and cut
- into 1/2-inch-thick “fries”
- 1 tablespoon vegetable oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper

Preheat oven to 425°F. Lightly coat baking sheet with nonstick cooking spray.

In large bowl, combine sweet potatoes, oil, salt, and pepper. Toss to coat. Spread fries in single layer on baking sheet.

Bake 10 minutes. Turn fries over. Continue baking until tender and lightly browned, about 10 minutes longer.

Healthy Cooking Tip
Pure maple syrup has a smoother, more subtle flavor than imitation syrups, and is actually less sweet. You don’t need the most expensive “fancy” or “light amber” grade of maple syrup, which is used in candy making. “Medium amber” is the best grade for table use. Cheap maple-flavored syrups are usually made from corn syrup, flavored with a little pure maple syrup; they are simply not as good as the real thing. If you heat maple syrup, it will go further. Keep open containers in the refrigerator.
