  • 2 cups diced cooked turkey or chicken (8 ounces)
  • 1 small red bell pepper, cored, seeded, and finely chopped (1/2 cup)
  • 1/2 cup frozen corn kernels, thawed and drained
  • 2 scallions, including tops, sliced (1/4 cup)
  • 1/2 cup plain low-fat yogurt
  • 3/4 teaspoon ground cumin
  • 1/8 teaspoon salt
  • 8 slices whole-grain bread
