Cottage Cheese Cantaloupe Salad

Simple to prepare, this light and refreshing melon salad can be easily wedged into any meal.

You Will Need
2 cups (16 ounces) 1% cottage cheese
1/2 cup raisins
1/4 cup chopped walnuts
1 medium cantaloupe, quartered and seeded
1/4 cup reduced-fat granola
2 kiwifruit, peeled and sliced
Leaf lettuce

What to Do
1. In a bowl, combine the cottage cheese, raisins, and walnuts; mix well.

2. Spoon into cantaloupe wedges.

3. Sprinkle with granola; top with kiwi. Serve immediately on lettuce-lined plates.

Serves: 4

Per serving: 282 calories, 7 g fat (1 g saturated fat), 5 mg cholesterol, 500 mg sodium, 41 g carbohydrate, 4 g fiber, 18 g protein.
