This healthy version of the sweetest way to serve yams is only 150 calories per serving.
You Will Need
2 cans (16 ounces each) sweet potatoes or yams (about 4 cups)
1⁄2 cup Splenda sweetener
4 egg whites or 1⁄2 cup liquid egg substitute
1⁄2 teaspoon salt
1 teaspoon vanilla extract
1⁄2 cup brown sugar or brown sugar substitute
1⁄4 cup chopped pecans
1⁄4 cup all-purpose flour
2 tablespoons light tub margarine
Butter-flavored cooking spray
What to Do
1. Preheat the oven to 350°F. Lightly grease (or spray with cooking spray) a shallow 2-quart baking dish.
2. Combine the sweet potatoes, sweetener, egg whites, salt, and vanilla in a food processor or blender and process until smooth. Spoon into the baking dish.
3. Stir together the brown sugar, pecans, flour, and margarine in a medium bowl. Lightly sprinkle over the sweet potato mixture. Spray the top with butter-flavored spray and bake until lightly browned, about 30 minutes.
