  • Where it's popular: Japan. Made from smoked, dried shavings of tuna, the flavorful broth is used as a base for soups and sauces and is a traditional remedy for colds and fatigue.

  • Why you should try it: Bonito broth is rich in disease-fighting antioxidants. Animal studies, as well as a small trial in humans, suggest it can lower blood pressure.

  • How to make it: Bring 2.5 cups of water to a boil, add a quarter cup of the flakes, and immediately remove from heat. Strain the stock before adding vegetables or noodles or simply drinking plain (serves two). The broth has a smoky, hearty flavor similar to that of beef bouillon and is fat-free and low in sodium. You can find the dried flakes at health food stores, Asian groceries, and online (at edenfoods.com, for example).
