White-Bread Taste, Whole-Wheat Health

We know whole-wheat bread is healthier, but many of us prefer the texture and taste of nutritionally inferior white. Ultragrain is a new whole-grain wheat flour that looks and tastes like white but has more nutrients. (A slice of white bread has less than 1 gram of fiber; a slice of bread made with Ultragrain, 2 grams.)

Made by ConAgra, Ultragrain is being tested in retail pizza doughs, breads, cookies and crackers. Eventually, it may be available in supermarkets. Until then, diet doctor Dean Ornish, who advised ConAgra on Ultragrain, recommends substituting brown rice for white, and switching to whole-grain toast to boost whole-grain intake.
