You Will Need
1 cup flour
1/2 teaspoon each baking powder and baking soda
1/4 teaspoon salt
1/3 cup pitted prunes
1/4 cup hot water
1/3 cup chunky peanut butter
2 tablespoons peanut or other vegetable oil
2/3 cup packed light brown sugar
2 tablespoons light corn syrup
1 egg
1 teaspoon vanilla extract
What to Do
1. Preheat oven to 350°F. Spray a 9-inch square baking pan with nonstick cooking spray; set aside. In a small bowl, whisk together the flour, baking powder, baking soda, and salt. In a food processor, process the prunes and hot water until smooth.
2. In a medium bowl, with an electric mixer, beat the peanut butter, oil, and brown sugar until creamy. Beat in the prune puree and corn syrup until well combined. Beat in the egg and vanilla extract until well combined. Fold in the flour mixture.
3. Spoon the batter into the prepared pan. Bake for 25 minutes or until a cake tester inserted in the center comes out clean. Cool the cake in the pan on a rack. Cut into 16 squares.
