CONVERT THEM INTO A CREAMY SOUP Nobody likes mushy broccoli or asparagus, or any other overboiled or oversteamed vegetable. But everyone likes cream of vegetable soup. The solution, then, is to turn your overcooked veggies into a creamy soup. And it’s easy to do.
1. Drain those limp vegetables and throw them into a blender. Just a few pulses will yield a vegetable puree that nobody will ever suspect was once a soggy disappointment.
2. Bring a similar volume of chicken or vegetable stock to a boil in a pot on the stove; then turn the heat down.
3. Stir in the vegetable puree, add salt and any seasonings you want, and let it simmer for five minutes. There’s no need to add cream or milk. But if it’s not smooth enough, run the whole thing through the blender again.
Serve the soup in a wide, flat soup bowl to further the illusion that you’d planned this treat from the beginning.
