Eater’s Digest: Instant, Magic Ice Cream Recipe

Confession: Last summer I ate my weight in this simple “ice cream”, inspired by my friend Gena at Choosing Raw, and both my wallet and waistline came out unscathed. This, dear eater, is what we call a magic recipe:

Banana Soft Serve
Peel a couple of ripe bananas and break in pieces; put in a plastic bag or container and freeze. (About 1 1/2 bananas per person is a nice serving size, but you can adjust to your taste.) When you’re ready to eat, toss them in a food processor fitted with the ‘S’ blade and whirl until bananas reach the consistency of soft serve ice cream, 3 to 5 minutes. If you’re feeling crazy, mix in a pinch of sea salt, a drop of vanilla extract, or a sprinkle of cocoa powder. Enjoy plain, or top with peanut butter or chocolate sauce.

Love it? Here’s my little secret: Sometimes I even make this for breakfast—it’s fantastic with pancakes or French Toast!
