Cooking time: 2 minutes

1 envelope unflavored gelatin
3/4 cup 1% low-fat milk
1/3 cup sugar
1 1/4 cups plain nonfat yogurt
1 cup sliced strawberries, fresh or frozen and thawed
1 tablespoon kirsch (optional)

1. In a saucepan, sprinkle gelatin over milk and let stand for 1 minute. Stir in sugar and set over moderately low heat, stirring, about 2 minutes, until dissolved.

2. Transfer the mixture to a large bowl and whisk in the yogurt. Fold in the strawberries and kirsch, if using.

3. Freeze in an ice cream maker.

Cooking Tip: Sprinkle gelatin onto liquid, never the other way round. Always give gelatin a few minutes to swell before heating.
