You Will Need
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup old-fashioned oats
4 tablespoons butter
2/3 cup firmly packed light brown sugar
1/2 cup granulated sugar
1 large egg
1 1/2 teaspoons vanilla
1/3 cup reduced-fat sour cream
3/4 cup semisweet chocolate chips
What to Do
1. Heat oven to 375° F. Line 2 large baking sheets with parchment paper. Whisk flour, baking soda, and salt together in a medium bowl. Stir in oats.
2. Beat butter, brown sugar, and granulated sugar together in a large mixer bowl at high speed until well blended. Add egg and vanilla; beat until light and creamy, about 3 minutes. Blend in sour cream with a wooden spoon, then stir in flour mixture all at once; stir just until combined (don't overmix or the cookies may become tough). Stir in chocolate chips.
3. Drop dough by heaping teaspoonfuls 2 inches apart onto lined baking sheets. Bake until cookies are golden, about 10 minutes. Cool on baking sheets 2 minutes, then transfer to wire racks and cool completely.
4. Store remaining cookies in airtight containers up to 2 weeks or freeze up to 3 months. One serving equals one cookie.
