All of the fun, none of the knee strain: The sit-down water-ski hydrofoil first elevated daredevils back in the 1980s. Today, the seat-board-rudder combo that takes flight as its towboat accelerates is having a resurgence. At “fly-ins” like the one this month in Weatherford, Texas, foilers follow up their 15-foot-high flight with backward rolls and flips, making sitting in your chair something of an extreme sport.
