Broccoli and Pearl Barley Salad

Barley has proven cholesterol-lowering powers and makes an interesting change from rice.

  • 5 1/2 ounces pearl barley
  • 2 cups water
  • 7 ounces broccoli, cut into small florets
  • 3 zucchini, thickly sliced


  • 2 cups sugar snap peas, halved
  • 1/2 cup dried apricots, thinly sliced
  • 1/4 cup pumpkin seeds
  • Salt and pepper

  • 1 tablespoon tomato puree
  • 2 tablespoons fresh lime juice
  • 2 teaspoons ground cumin


  • Dash of Tabasco sauce

  • 2 tablespoons chopped fresh cilantro or parsley (optional)

Bring to a boil, then reduce the heat to low and cover. Simmer very gently until most of the water has been absorbed and the grains are tender but still firm, about 30 minutes. Drain the barley well.[/step-item]

Reduce the heat and simmer the vegetables until they are just tender but still crisp, about 3-4 minutes, then drain well and rinse briefly with cold water.[/step-item]
