Buffoon’s Macaroons Recipe

You won’t find an easier way to make these chewy chocolate treats.

  • 2 tbsp. egg white product (or 1 egg white)
  • 1/3 cup icing (confectioner’s) sugar
  • 1 tsp. cocoa, sifted if lumpy
  • ¾ cup medium unsweetened coconut

Using a rounded tablespoon of coconut mixture for each, spoon 4 mounds onto each sheet. Make sure the mounds are spaced about 1 1/2 inches apart. Place 1 plate in the microwave. Microwave on high (100%) for about 90 seconds until the mixture is firm. Remove the plate from the microwave. Let cool for 5 minutes. Repeat with the second plate.
