Zesty Cheddar-Asparagus Quiche

This quiche uses thin-sliced potatoes as a lower-calorie — but delicious — crust alternative to traditional pastry.

  • 8 ounces small all-purpose potatoes, peeled and very thinly sliced
  • 2 teaspoons olive oil
  • 1 pound asparagus, trimmed
  • 1/2 teaspoon salt, divided
  • 3/4 cup shredded reduced-fat sharp cheddar cheese
  • 3 scallions, sliced


  • 1 can (12 ounces) evaporated fat-free milk
  • 2 large eggs
  • 2 large egg whites
  • 2 teaspoons butter, melted
  • 1 teaspoon dry mustard
  • 1/4 teaspoon freshly ground pepper
