Cookbook Obsession: Seamus Mullen’s Hero Food
When rheumatoid arthritis almost caused chef Seamus Mullen to hang up his apron, he turned to food to help him heal.

To manage painful inflammation—and improve his well-being—Mullen turned to the one thing he knows best to help his symptoms: food. “As chef, I’ve always been aware of the role food can play with our health, but I never understood just how crucial it was to my own wellness,” Mullen says. So he made the commitment to find foods that improved his overall health.
In his new book, Hero Food (Andrews McMeel, $35), he features 18 superfoods that he eats regularly. “I know there’s no silver bullet,” he says, “but I have discovered some foods can make a dramatic difference.” One of these foods is sweet spring peas, which Mullen thinks of as bright green pills filled with vital nutrients such as vitamins A, C, and K, plus zinc and some daily fiber. Now in season, peas can be prepared many ways, from salads to sides to Mullen’s recipe for Sweet Pea Soup.
