Iced Pear-Chocolate Cake

Slices of soft pear are captured inside this chocolate-flecked cake.

  • 6 ounces (1 1/2 sticks) butter, softened
  • 3/4 cup superfine sugar
  • 3 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt


  • 4 ounces (4 squares) semisweet chocolate, finely grated
  • 1 can (14-ounce) pear halves in syrup
  • 1 cup confectioners’ sugar, sifted
  • 2-3 teaspoons lemon juice
  • Chocolate sprinkles, to garnish
