Jumbo Stuffed Portobello Mushrooms With Camembert and Pine Nuts

Your new favorite stuffed mushrooms.

Large flat mushrooms are ideal for stuffing with your favorite filling. These ones are topped with slices of creamy cheese, sprinkled with pine nuts and served on toast for a smart, no-fuss light lunch or supper. If you like, add a salad.

  • 4 large flat or portobello mushrooms
  • A little olive oil
  • 80 g Camembert or brie cheese
  • 2 tablespoons dried whole grain breadcrumbs
  • 2 tablespoons pine nuts
  • 4 slices whole grain or multigrain bread
  • 1 ripe beefsteak tomato

[step-item number=”1″ image_url=”” title=”” ]Preheat the oven to 375°F. Pull out the mushroom stalks and discard, then wipe the tops with paper towel (don’t wash or peel the mushrooms). Rub the tops of the mushrooms lightly with a little olive oil, then place them upside down in a non-stick, shallow roasting dish. Season with freshly ground black pepper and bake for 10 minutes. Remove from the oven.[/step-item]

[step-item number=”2″ image_url=”” title=”” ]Slice the cheese thinly and place in the mushroom cups. Mix together the breadcrumbs and nuts and sprinkle the mixture over the cheese. Return the mushrooms to the oven and bake for a further 5 minutes until the cheese just melts.[/step-item]
