Refried Bean Bake Recipe

Serve up this bubbling hot casserole topped with melted cheese and watch your family and friends drool.

  • 2 tablespoons vegetable oil
  • 1/4 cup finely chopped sweet yellow onion, such as Vidalia
  • 1/4 cup chopped green bell pepper
  • 1 teaspoon Ancho chili powder


  • Two 16-ounce cans refried beans
  • 1/2 cup sour cream
  • 1/3 cup finely shredded mild cheddar cheese
  • 1/2 cup finely shredded Monterey Jack cheese

[step-item number=”1″ image_url=”” title=”” ]Coat the inside of a 9-inch baking dish with non-stick cooking spray.  Preheat the oven to 350 degrees.[/step-item]

[step-item number=”2″ image_url=”” title=”” ]In a medium sauté pan, heat the oil over medium high heat and sauté the onion, pepper, and chile powder for 3 to 4 minutes, until the vegetables just soften.  Remove from the heat and transfer to a large mixing bowl to cool. [/step-item]

[step-item number=”3″ image_url=”” title=”” ]Add the refried beans to the cooled vegetables and stir to blend.  Add the sour cream and stir until the mixture is blended.  Transfer to the prepared baking dish and sprinkle with both cheeses.  (Do-Ahead: At this point you can cover and refrigerate the casserole for up to 2 days.)  [/step-item]
